Day 22: Eggpant Fettuccine

Boy do I love eggplant. Eggplant parmesan, fried eggplant, baked, boiled heck anyway is delicious! Tonight I cooked my grandma (I call her Nana) a yummy and healthy dinner using eggplant! 


I chose to make a pasta sauce with ground hamburger and roasted eggplant along with garlic shirataki fettuccine noodles. It tasted delicious! 

Roasted Eggplant: 

1 medium eggplant

1/2 tablespoon tuscan herb olive oil


To make the eggplant, cut it into cubes and place in a medium bowl. Drizzle with tuscan herb olive oil and pepper. Roast in the oven at 400 for 20 minutes. 



Tomato Basil Meat Sauce:

1 lb of ground hamburger meat

1/2 jar of tomato basil pasta sauce

In a pan, brown the ground beef until it is cooked. Add the tomato sauce and let it warm up. Once the eggplant is done add it to the sauce. 



1 package of shirataki fettuccine noodles

2 small cloves of garlic, crushed 

In a pan add a drizzle of olive oil and the crushed garlic. Cook for 1 minute then add the noodles. Constantly stir the noodles around for 5 minutes or until the noodles become hot. 

Once the pasta is done, make yourself a nice bowl of eggplant fettuccine (:
