Energy bites are my favorite snack because they 1) give me energy before a workout (hence the name) 2) are really yummy and 3) hold me over between meals if I need a quick snack.
I’ve recently started making big batches of energy bites for my athlete friends. They like to eat energy bites before practice because our cafeteria isn’t open early enough for them to eat before they play.
I’ve made a few versions of these energy bites, some with cocoa powder, shredded coconut and protein powder. My favorite version is the basic peanut butter chocolate chip bite.
1/2 cup peanut butter
1/3 cup honey (I usually do half of this)
1 cup rolled oats
1/2 cup ground flax seed
1/2 tbsp vanilla
1/4-1/3 cup chocolate chips
1 tbsp cocoa powder (optional)
In a microwave safe bowl combine the peanut butter and honey. Microwave for 25 seconds.
Add the oats, flax seed, vanilla and chocolate chips and mix together
Place in the fridge and let the mix harden for 15-20 min
Roll into 1 inch balls. I use a cookie scoop because it’s easier to shape them.
Store in an airtight container or plastic bag in the fridge or freezer.
Here are some additions/substitute ideas:
1) Peanut Butter
– almond butter
– cashew butter
2) Chocolate Chips
– cacao nibs
– dried fruits
– cocoa powder
– agave nectar
– more nut butter+ coconut oil
4) Additions: (~1tbsp each)
– chia seeds
– hemp seeds
– protein powder
– shredded coconut (unsweetened)
– cacao nibs
